We are a non-profit organization that makes and distributes baked goods. Our goal is to partner with organizations that provide support to individuals and families facing food insecurity, homelessness, and mental health illness.

My name is Assiris Camargo, (pronounced a series) and I am the founder of The Bandit Bakery. The driving force behind The Bandit Bakery’s mission started in January 2025. After years of struggling with mental health illness, my best friend Courtlandt, passed away.

Courtlandt and I shared a love of cooking and baking, and so I took to our shared love of baking as a way to work through my sadness and grief. The quantities of baked goods became so large that I started gifting them to friends, neighbors, co-workers, and strangers. As I found myself sharing the story behind my baking and the redirection of my grief, I realized what started out as a therapeutic outlet transformed into a labor of love.

The Bandit Bakery honors Courtlandt’s memory by joining our shared love of baking with the desire to provide relief to human suffering, and to help make the bitter moments of life more sweet.
